In a large bowl, crush the strawberries little by little until you have 4 cups of crushed fruit. In a cast iron pan, mix the strawberries, sugar and lemon juice. Cook over low heat, stirring constantly, until the sugar has dissolved.
Bring the heat to a boil and let the mixture boil, while stirring, until it reaches a temperature of 105 ° C (220 ° F).
Pour into hot, sterilized jars, leaving about 1 centimeter of space between the jelly and the neck of the jar. It closes well. Chill in a water bath if it is to be consumed immediately, otherwise, just chill.
