BABA AU RHUM TART
HOW TO MAKE
Ingredients for preparing the rhum cake:
1 1/2 cup butter
1 ½ cup sugar
2 teaspoons baking powder
6 eggs
1 ½ cup flour
1 cup cornstarch
¼ cup of rum
Preparation
In a small pot warm the milk and cook on low heat for 2 minutes, remove. In a large bowl, combine milk, yeast, and 1/2 cup of flour. Let the yeast act for 20 minutes. Whipping in an electric mixer add to the mixture the eggs, remaining flour, 2 tablespoons sugar, salt, and half of both rinds of shell.
When you have made a dough incorporate the butter and put the dough on a plate. Let it grow for 20 minutes.
Pre heat the oven to 180 degrees Celsius. Grease a large cake pan (approx 20 cm). Put the dough in the mold, cover with plastic wrap and let the dough grow again for an additional 20 minutes.
Bake for 30 minutes, placing the mold in the center of the oven. The cake should be lightly browned.
While baking the cake in a medium saucepan combine water, icing sugar, remaining peel rind, vanilla and 10 tablespoons rum. Cook until boiled and the sugar has melted. Remove from heat. Add the rest of the rum. Remove the cake from the mold and allow it to cool on a cake rack. With a toothpick, make little ollos in the cake. Pour the rum mixture over the cake.
