HOW TO MAKE
This is a delicious pie, fresh and sure to please! Good fresh fruit according to your preferences, a homemade vanilla custard cream and a crunchy crunchy pastry dough.

Custard
- 25cl of milk
- 3 tablespoons of potato starch (potato or cornflour)
- 65g of sugar
- 1 vanilla bean
- 3 egg yolks
- 25g of butter
1) Prepare the pastry cream: In a bowl, mix the 3 egg yolks, the starch and 4 tbsp milk with a whisk.
2) Cut the vanilla bean in half and remove the seeds with a small knife. In a small saucepan, put the rest of the milk, the vanilla bean and its seeds and the sugar to boil (not boil) whisking. Pour the mixture with the eggs and over medium heat, whisking incessantly until the cream is homogeneous and thick. Remove the clove. Get out of the fire. Add the 25g butter in small pieces .. Whisk vigorously, put in a bowl and let cool.
3) When the pie crust has cooled, spread the pastry cream on and refrigerate. You can also prepare the confectioner's custard in advance and store it in a refrigerator in a bowl and covered with a film paper (which affects the cream, this will avoid seeing a film form).
4) At the time of serving or maximum 2 to 3 hours before (to be kept in the refrigerator), wash and cut the fruits:
